Sour Cream Cookies

1 cup sugar
3 eggs
1/2 cup shortening
1 cup sour cream
4 cups flour
1 tsp baking soda
1 tsp salt
2 tbsp baking powder
1 tsp vanilla

Cream sugar, eggs and shortening together.  Add sour cream.  Add flour, baking soda, salt, baking powder and vanilla.  Mix well.
Dough maybe a little sticky just add flour until it's not sticky.  I usually add about another 1/2 cup then roll it out onto a floured surface.  About 1/4 to 1/2 inch thick. Depends on how thick you want them. Me personally the thick the better.  Bake at 375 for 8-10.

Pumpkin Roll

1 cup sugar
3/4 cup flour
1 tsp salt
1 tsp soda
1/2 tsp cinnamon
3 eggs
2/3 cups mashed pumpkin
1/2 cup chopped nuts

Filling

1 8oz. softened cream cheese
2 tsp melted butter
1 tsp vanilla
1 cup powered sugar

Grease a 15x101/2 in cookie sheet (jelly roll pan).  Cut wax paper to fit on the bottom of the pan.  Mix together sugar, flour, salt, soda, cinnamon, eggs and pumpkin.  Spread the mixture over the wax paper. Sprinkle the chopped nuts on top of the spread.  Bake at 350 for 15 minutes.  While it bakes, lay a dish towel on the table. Sprinkle powered sugar all over it.  When the pumpkin roll comes out of the oven, flop it onto the towel, chopped nuts down on the powered sugar.  Peel off the wax paper. Roll it up lengthwise and it it cool.  While roll is cooling, mix together cream cheese, butter, vanilla and powered sugar until creamy.  Once the roll is cool unroll and spread filling onto it.  Then roll it back up without the towel.Wrap in wax paper and place in refrigerator. Serve when chilled.
